First, let me mention that I am not a follower of any particular diet (besides somewhat healthy-ish), but wanted an alternative to regular pasta (and other brown rice pasta I tried). Today, I cooked this, tossed with vegetarian meatballs (again, just a meatless day option) in simmered sauce, added fresh basil and raw chopped garlic, served on a bed of spinach (that wilts under hot pasta), and it was very, VERY good. I worried that I might have overcooked them, and they would fall apart - nothing like that. They were perfect in a meal. The shape is flat, fettuccini or linguine semblance. I am looking forward making stroganoff, and alfredo sauces to go with it, or simply serve with cheese. The flavor is great, as well as the texture. I will be purchasing more! I preferred GreeNoodles to the other brand I used.
